Basil is what the infamous Italian sauce pesto is made of. It is added to tomato sauces, marinades, pickled vegetables and salads. In traditional Bulgarian cuisine it is used in the preparation of beef and goose, ripe and green beans, mashed potatoes, sauerkraut, in meat and vegetable broths, for vegetable dishes and in the preparation of sauces. It adds a spicy aroma to potato soups, especially when combined with onions.
